
Recipe: Mexican Bean and Corn Stuffed Sweet Potato with Avocado and Yoghurt
If you’re looking for a delicious Winter Warmer that you can have on the table in under 30 minutes, then you can’t go past this Mexican Bean and Corn Stuffed Sweet Potato recipe from our Preschool menu.
We love to use sweet potatoes in many of our Autumn/Winter meals because they’re not only delicious, they’re also fantastic for growing bodies. Sweet potatoes are an excellent source of fibre and antioxidants, which protect your body from free radical damage and promote a healthy gut and brain. They’re also incredibly rich in beta carotene, which is converted to vitamin A to support good vision and your immune system.
Mexican Bean Recipe Ingredients (makes 4-5 servings):
- Ingredients:
- 4 x sweet potatoes
Bean mix:
- 2tsp olive oil
- 3-4 jars tomato, passata
- 5 medium zucchinis, grated
- 1 cup corn
- 1 clove garlic diced
- 1/4 cup red onion diced
- 1/4 lime juiced
- 2-4 tbsp paprika, sweet dried
- 2-4 tbsp cumin, dried
- 2-4 tbsp coriander, dried
- Pinch of sea salt and pepper
Serve on the side:
- Coconut yoghurt
- 1 x avocado, sliced
- 1/4 lime juiced
- 1/3 cup or coriander, freshly chopped
- 1 cup cherry tomatoes chopped
Mexican Bean Recipe Method :
- Preheat the oven to 200 degrees and line a baking tray with parchment paper.
- Slice the sweet potatoes in half lengthwise, or if they are very large, slice into multiple lengths.
- Drizzle the sweet potatoes with some oil and roast cut side down on the baking tray (alternatively, slice into rounds and children can top the rounds with the bean mix).
- Make the bean mix:
- Drain and rinse the beans
- In a bowl combine the beans, passata, corn, zucchini, garlic, red onion and spices. Drizzle with the lime juice and olive oil. Sprinkle with sea salt, and pepper. Mix to combine.
- Add the ingredients to a saucepan and heat until warm.
- Serve deconstructed with the other accompaniments – we like avocado, vegan yoghurt and a squeeze of lime.
