Recipe: Kale and Pepita Pesto Pasta
Our kale and pepita seed pesto zoo pasta recipe, from our new Autumn + Winter Menu, is always such a hit with our children and Educators – in fact, it never lasts very long on the lunch table.
This pasta recipe is a fantastic weeknight meal option for busy families as it’s so easy to make – and reheat whenever you need to. The pesto can even be made 3 days ahead if kept in an airtight container. You can also freeze it for up to 2 months.
Recipe Ingredients (serves 4):
- 1 bunch of kale
- 1 small garlic
- 3 tbsp pepita seeds
- 5 tbsp extra virgin olive oil
- 3 tbsp nutritional yeast
- 1 lemon, zested and juiced
- 350g Gluten free zoo or other fun pasta
Recipe Method :
- Bring a pot of water to the boil. Cook the kale for 30 secs, drain and transfer to a bowl of ice-cold water for 5 mins. Drain again and pat dry.
- Put the garlic, pepita seeds, oil, nutritional yeast, lemon juice and zest, and drained kale in a food processor. Blitz until smooth, then season. Loosen with a splash of water, if it’s too thick.
- Cook the pasta following pack instructions, then toss with the pesto.
- Enjoy!
We like to serve our pesto pasta deconstructed with a side of steamed broccoli and chickpeas.
As part of our mission, we provide nutritionally balanced, healthy, and delicious plant-based catering for children.
We offer Preschoolers fresh meals and snacks prepared onsite daily in our commercial-grade kitchen by our trained and passionate cook, all included in our daily fees. Our menu is 100% plant based, entirely free of animal products. The snacks and meals have been thoughtfully developed to appeal to children, but most importantly to be perfectly nutritionally balanced for children aged 2-6.
Our cook has crafted rotating seasonal menus in partnership with a registered dietitian and in consultation with Australian government guidelines for optimum age-appropriate nutrition. Our menu was also awarded the Excellence in Food & Menu Design award at the 2022 Excellence In Early Childhood Education Awards. This award recognised the hard work of our team to provide well-balanced, nutritious, and delicious food, that is considerate of the individual needs of children, allergies, sensitivities and cultures.
At Sustainable Play we encourage children to learn where their food comes from and to empower them with the tools to eat sustainably while being thoughtful to our planet and its animals. Children are encouraged to participate in planting, growing, and tending to fresh produce in the preschool garden – harvesting, helping prepare, cook, and then continuing the cycle by composting leftovers to be later used to feed our garden plants.
