As the Summer season heats up, it’s the perfect time to head outdoors and enjoy lunch or snacks in the sunshine or shaded by your favourite tree.

That’s why we’re sharing 4 of our favourite plant-based snacks that are perfect to enjoy on the go. They can all be made ahead of time, easily stored in a lunchbox, and able to be enjoyed by the whole family! So, get ready to elevate your summer snacking game with these delicious and portable plant-powered goodies!

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/3 cup maple syrup
  • 1/2 cup dried fruit mix (raisins, cranberries, apricots)
  • 1/4 cup ground flaxseeds
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Method:

  • In a large mixing bowl, combine rolled oats, almond butter, maple syrup, dried fruit mix, ground flaxseeds, vanilla extract, and a pinch of salt.
  • Mix well until all ingredients are evenly combined.
  • With clean hands, roll the mixture into bite-sized balls and place them on a parchment-lined tray.
  • Refrigerate for at least 30 minutes before serving.

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste
  • 1 cup mixed nuts and seeds (almonds, cashews, pumpkin seeds)

Method:

  • Preheat the oven to 200°C.
  • Pat dry the chickpeas with a paper towel to remove excess moisture.
  • In a bowl, toss chickpeas with olive oil, ground cumin, smoked paprika, garlic powder, onion powder, and salt until well coated.
  • Spread the seasoned chickpeas and mixed nuts/seeds on a baking sheet in a single layer.
  • Roast for 25-30 minutes or until the chickpeas are crispy, shaking the pan halfway through for even cooking.
  • Allow to cool before serving as a crunchy and protein-packed snack.

  • Salt to taste

Method:

  1. Preheat the oven to 175°C.
  2. In a large bowl, toss kale leaves with olive oil, garlic powder, onion powder, and salt until evenly coated.
  3. Spread the kale in a single layer on a baking sheet.
  4. Bake for 10-15 minutes or until the edges are crispy. Allow to cool before serving.
